This is one of those no-brainers that can really catch you off guard. When you arrive at a plumbing-related water loss job, your first task is to locate the building's main water shut-off valve. There is nothing more embarrassing than a restorative drying professional looking clueless while water keeps flowing into the building!
You may even want to consider finding out where the main water shut-off valve is before you get to the job—ask the homeowner over the phone. If they can tell you where it is, share that with your team so they can familiarize themselves with it as soon as they arrive on site. If the homeowner doesn't know where it's located, you can suggest they try to find out as soon as possible.
